The blade for this knife is beveled on one side only and is designed to slice sashimi (raw fish meat) and sushi.
Fujitake is a knife maker located in Gifu prefecture, Seki City in Japan. The blades are made of VG-1 (stainless steel with molybdenum). The Fujitake knives are well balanced with long lasting cutting edge and have rust-resistant properties. The handle is made of laminated wood. 3 different lengths from 210mm to 270mm are available.
